Our Old School Chardonnay is from specific blocks from our Langton Hayview vineyards in Mt Barker. The fruit was picked a little after that for our Styx Gully to produce a slightly fuller style of Chardonnay. Predominately barrel fermented (~40% new) it all went through malolactic fermentation to produce a softer, complex, and textured wine. Bright and clear with a light golden straw colour. Has light melon fruit aromas; think honeydew and rockmelon, along with a delicate creamy cashew nut character and just a hint of butterscotch adding complexity. This is a well-balanced and well-integrated Chardonnay. After 6 months in barrel post fermentation, the melon fruit flavours are well integrated with the subtle oak characters. It was a clean primary ferment so there s still a lovely freshness to this wine and, as the malolactic fermentation reduces the acidity, it s soft and generous and imminently drinkable!
Enjoy this wine with fresh white fish or fresh shellfish (oysters with a splash of lemon juice are a big tick), and grilled prawns with a fresh citrus sauce will also be a winner too. Vietnamese-style chicken salad is also a great pairing if you’re feeling something more substantial too.
